I've noticed you were able to switch the plasma theme with no problem at all. On the contrary, I had to rezise or move the plasma panel in order to see changes applied. I have to say I was testing KDE 4.1 Beta under Ubuntu.

I use Kubuntu as a base system, but I compile KDE from sources. Also, this version is newer than the Betas so future Kubuntu packages will most likely fix your problem.
