Vicki Johnston gives us a background on Quinoa an amazing South American whole grain, and shows us how to prepare it in just a few minutes.
Recipe for Quinoa:
1 cup of traditional Quinoa
½ cup Inca Red Quinoa
3 cups Water
½ tsp. Turmeric
1 tsp Sea Salt
Wash Quinoa grains in a fine-mesh strainer. Pressure cook Quinoa, Water, Turmeric, Sea Salt for 7 minutes.
1 cup Cherry Tomatoes
1 cup finely chopped Parsley
In a serving bowl pour enough Olive Oil to just cover the bottom of the bowl – about 2 tablespoons. Add 1 to 2 tsp. of salt, zest & juice of organic Lime. Beat with a fork until frothy.
Swirl marinade around sides of the bowl and add cooked Quinoa. Add Cherry Tomatoes and Parsley, toss and serve.
