The Cabernet Sauvignon that will go into the 2010 Pamelita was harvested October 28th from Tres Palmas vineyard. After three weeks of maceration, fermentation, and tannin extraction, it was time to press the Cabernet Sauvignon again to separate the grape skins and seeds from the soon-to-be-wine before going into barrel. We brought in our muscle (Natalie) to dig out the grapes from the tank into half-ton bins, which were then dumped into the press.
