In Turpan, China, we tasted one of the Uighur specialties found all over the Xinjiang province: Boiled Goat's Head.
There is way more meat on a goat's head than you'd think! When you order it they take the goat's head, which has been sitting in a cauldron of heads, lungs, intestines, etc., and rip all the meat and skin off for you. Actually, most of it is skin and you need to wade through that to get to the 'good' bits. The guy seemed to think I wanted it to go, so he sprinkled some salt on the pile and then put it all in a plastic bag.
