But to be honest I can't really think of a way that would have satisfied me.
How lucky you are to get a hold of Stumptown beans in Texas!! Dalas is one nice dude.
I need some more but it's like 18 bucks to get 'em down here.
And yea it's not a regular moka pot - the little 'bell' on the top of the stem thing, where it comes out, is weighed down so it forces more pressure, hence the crema.

I like to grind the shit out of the beans to maximize surface area. I HIGHLY recommend this pot (link above) and the Hair Bender from Stumptown.
I did see a similar moka pot at this place in seattle called Caffe D'arte. I will consider now that I've seen what it can do!
