Crock Pot Creamy Mango Salsa Chicken is a great way for you to feed your hungry family at dinner time. It's quick and easy to make with only 5 ingredients and an avocado salad that can be whipped up in less than 3 minutes. It's also super for tailgating or a potluck.
Following are the ingredients you will need to prepare this crock pot recipe. We are using a Hamilton Beach 4.5 quart crock pot, but any brand will do.
Creamy Mango Salsa Chicken - Crock Pot Recipe
1 1/4 pounds organic free range chicken breasts
1 1/2 cups mango salsa
1 15oz can black beans rinsed and drained
1 cup frozen corn
4oz cream cheese
Place chicken in stoneware, cover with salsa, beans and corn. Cover & cook on low for 6-8 hours. One hour before serving add cream cheese. Stir before serving.
Avocado Salad ingredients:
2 large haas avocados
1/2 cup chopped purple cabbage
1/4 cup extra-virgin olive oil
1-2 TBSP balsamic vinegar
Dice avocados and place in medium size bowl. Add chopped purple cabbage, extra-virgin olive oil, & balsamic vinegar. Mix together until avocados and cabbage is thoroughly blended.
