I almost always try to shoot 1fps (I'd rather have a surplus of frames). There are a couple of exceptions, like the night to morning shot at the beginning. That was more like a frame every few minutes. The driving footage was probably a 1 second exposure every 3 seconds.

And your Nikon can do all these time lapse settings? I've got a canon 30d, I've never seen any timelapse options, but I'm sure google can tell me about it :)

The Nikon D200 has it built in. The Canon 30D takes some kind of external intervalometer.
