Here's the easiest way to make French onion soup (besides buying it from a restaurant). You can make it vegetarian by replacing the stock with vegetable stock and adding more olive oil instead of butter. You can change it up by adding different cheese, stock, beer instead of wine, different seasonings and even different onions. Some onions will make it more sweet that's why I use yellow or white instead of red onions. If you are trying to stay away from gluten...use gluten-free toasted bread and either cornstarch to thicken or an egg yolk. Examples here soupsong.com/bthicken.html

In the above video I only made half the onions and stock for demonstration only. I usually use the whole 5lbs of onions, etc. Onions done this way are easy and I like to freeze them for adding to pasta or pizza. They add so much flavor that it's good to make extra.
