We are preparing our first Goose and basically every step in the process is about removing the fat, including this — the most special step. In the end we kept 2 cups of the fat to cook with and probably got rid of another 3-4 cups, not including the large chunks that were initially pulled off. Photos of the fat to be added. Apparently goose fat is great to cook with outside of eating goose.

    No idea... we're just putting the goose on hot things before cooking it. It was on our radiator for like 30 minutes this morning after we woke up.
