20. The Feedbag at Alto: Origin of a New Dish

It should be no secret to Feedbag readers how much we like Michael White, the man behind Alto and Convivio, and one of the city’s true fat-masters. Nobody cooks rich food like “Chef Bianco,” and when we heard that he was putting escolar, the fattiest of all fishes, on the menu at Alto, I hastened down to capture the creation process at work.
