    Excellent video!

I had the pleasure of attending a butchery class held by Brandon and Lauren on Vashon Island, in Washington.

Brandon and Lauren's knowledge of anatomy, methodology, history, preparation, and aesthetics are part of a deeply felt philosophy that is very compellingly relayed by them.

It was one of the best food related experiences I have ever had.

I would highly recommend it to others.

Nicely done, very informative video. Good on ya! I would like to see how the hog is gutted and bled out after ending it's life and cut into the two halves.

    Next do sheep and goats.

This is super necessary info for the future and being a video producer myself, I can appreciate how well and economically it is done. Bravo!

Thank you for the video. Very informative. What species of pig do you recommend raising in NY, VT area?

    thanks everyone for the compliments.

@jonathoan - i've spoken with a few people lately who are raising Large Blacks out in your neck of the woods, but really any heritage breed will do well - tamworth, red wattle, ossabaw, berkshire...

Love the video, and the hair. Looks like you're doing some seriously awesome work these days. We should collaborate sometime (I've been considering a scavenging/camping cooking show for the web...). Let me know the next time you're in DC.

Excellent video! Found it from the NPR article - npr.org/blogs/thesalt/2012/01/21/145521431/how-one-former-vegan-learned-to-embrace-butchering

Good to see how our food gets to the table, the honesty is refreshing.

Good how-to for handling the results of boar hunting as well.

Fantastic!!! My suggestion is to buy a pop filter for your next VO session. The pops are distracting from an otherwise fantastic video, where clearly a lot of time and effort went into ensuring that the content and the production is top notch.

You may even be able to find a plugin that you can run on your already existing audio to remove the popping.
