Gong Xi Fa Cai! Chicken congee is one of my favourite Chinese dishes and it is super easy to make! However I forgot to wash the rice and add dried mushrooms. Might have added a bit too much stock, but it still tasted delicious!
2 x litres chicken stock
1 x cup jasmine rice, washed and drained
2 x chicken breasts
3 x spring onions, chopped
light soy sauce
Bring chicken stock, chicken, rice, 2 spring onions and ginger to the boil. Lower to simmer until mushy like porridge (approx 2 hours). Remove chicken and shred. Replace chicken into pot. Garnish with a few drops of sesame oil, soy sauce, coriander, chopped spring onion, and fried shallots.
