Cindy Pawlcyn is a Napa Valley chef icon. With three restaurants currently in the area and multiple decades under her belt, she’s uniquely qualified to testify about Napa’s incredible metamorphosis, from its start with three mediocre restaurants to its current state as a culinary mecca.
And 2011 has been an especially big year for her, having swapped out Go Fish in favor of Brassica. In the video above, she talks about that transition.
