Recipe adapted from Self.com's Lean Lasagna
Preheat oven to 375 F. Cover with aluminum foil and bake for 25 minutes. Uncover and bake for another 25 minutes.
Ingredients:
- 1/2 cup chopped onion
- 1 lb ground turkey
- 1/2 cup tofu, chopped
- 3 cups tomato sauce
- 1 tsp dried basil
- 1 tsp dried parsley
- 1 tsp oregano
- 2 cloves garlic, minced
- 1/2 cup mushrooms, chopped
- 6 cups chopped fresh spinach
- 2 cups ricotta
- 1/4 tsp nutmeg
- Sprinkle of cinnamon
- 1 package uncooked lasagna noodles
- 1 oz. bag of shredded part-skim mozzarella
