James started in the hospitality industry at age 15 in London. Since then he has worked in swanky kitchens in London before moving to New Zealand, and finally landing his dream job at Whare Kea in Lake Wanaka.

He loves his job, and the access to local artisan produce and markets is heaven for a chef who thrives on cooking according to the seasons to discerning international clientele.

“The right environment allows you to have the freedom to express yourself and the food and have the time to do exactly what you want” says James.
