Walking in the forest on one of our foraging trips, we realized how poor spring still is in its offering. The sea around the island is cold and the nature is quite a bit behind in comparison to the mainland. Regardless of limitations, there are ingredients worthwhile to forage this early in season. One of them is lichen, a delicacy that grows on our trees...
We tried to educate ourselves about moss and lichen. Besides familiarity at first sight, there's not much in common. Moss is a green plant with stems and leaves; lichen doesn't have these and belongs to the species of fungi. They are delicious, have a subtle foresty taste and nice texture. Trees at the Pädaste Estate grow lichen in abundance, sign of a balanced and clean environment.
Anna-Liisa's search resulted in a wonderful discovery that made our kitchenteam jump with excitement!
Lichen now plays its role along with cod cheek in one of the courses in the Islands' Degustation Menu, served at Alexander Restaurant.
