Egg roll (makes two)

4 eggs
2 pita breads
One large onion
2 green chillies
Salt and pepper to taste
Chilli powder to taste
1 teaspoon chat masala
¼ black salt*
Juice of half a lemon
Oil to cook
Condiments of your choice - mustard, Tomato and or barbecue sauce
* also called rock salt, has a pinkish hue and a unique flavour and can be purchased in Indian stores

Finely slice the onions, add the spices and lemon juice and mix well. Set aside.
Take two eggs, add a pinch of salt and whisk well.
On a tava or large fry pan, place a teaspoon of oil followed by the eg mixture, swirl the mixture to ensure it spreads on the frying pan or tava. The consistency we are after is that of a thin omelette. When the egg is nearly set, place the pita bread on it and press well to ensure all the egg is cooked. Turn the bread and egg over and add half the onion mixture. Pour the condiments of your choice and roll the bread. Serve hot and repeat the process to make the second egg roll.
