Having a lasagne in the freezer gives me a happy, calm feeling. I know that whatever happens, however busy we all get, a delicious, comforting, home-cooked meal is only an hour away. So, whenever I’m making lasagne I make two: one for tonight, one for those ‘what’s for dinner?’ emergencies.
To make this lasagne you need a batch of bolognaise sauce already made. My favourite kid-friendly ragu is here. You could also use my Roman pork sausage ragu which brings lovely fennel flavours into this dish. The secrets to my lasagne are the addition of boiled eggs, and the use of three different types of cheese. It’s rich but so delicious.
