From its sugary root, used extensively in the manufacture of table sugar, to its nutritious leaves (chard), beet is as nutritive as it is versatile. Beet root may be eaten raw, steamed or sauteed, and is especially delicious when roasted and caramelized. What you might not know is that beets make amazing chips that pack much more nutrition per chip than the white potato, and taste great too! Best of all, they're so simple to make.
