A truly humble fellow with a family tradition that brings some amazing flavors to our table. How fortunate we are that this kind of hand-made tradition still exists.
The Blind Pig team and myself had the pleasure of taking the tour of Benton's Smoky Mountain Hams, filming along the way in support of the "Preserve" film project and Mike Moore's new food-experience magazine "Underbelly".
My only regret is that the screen cannot convey the heavenly smell of cured pork that permeates this little corner of Tennessee. (At least you get a glimpse behind-the-scenes in this brief documentary.)
