some tips for the the shortcut
Tab = Edit Mode)
CTRL+E (edit mode) = Edge Special Menu (Mark Seams)
U (edit mode) = UV Calculation Menu
G = Grab
S = Scale
R = Rotation
O = Proportional Editing (wheelmouse to change the brush size)

1-select the edge I want to use as seams
2-mark as seams (CTRL+E)
3-Unwrap (U)

5-Rename the UV Texture to "Result" (F9)
4-Create a new Image named "Skin" for instance in the UV Editor (must be a size of power of two !!!)

1-Create a new UV Texture named "Front" (F9)
2-go to front view (numpad 1)
3-Projection from view (U)
4-selecting the front view reference image in the UV Editor
5-repeating the 4 precedent steps for all the other views (side, ...)
6-adjusting the UVs with the grab,rotate,scale tools and "proportional editing" (Tips : use the scroll wheel to change the brush size of the proportional editing while editing :) )

1-Create a new Material (F5)
2-In the "Material" tab set to "Shadeless" mode
3-In the "Texture" tab add a new texture to it (rename it skin)
4-In the "Map Input" tab set to UV
4-go to the Texture Buttons (F6)
5-associate the "Skin" Image to the "Skin" Texture
||Painting Mode|| (@ 6:11)
1-Active "Paint Mode"
2-Go to the "Editing" panel
3-Set UV "Result" as "Active UV Layer", "Rendering UV Texture", "Texture Paint Layer Stencil"
4-Set UV "Front" as "Layer used for texture paint cloning"
5-In the "Paint" tab set the following "Clone", "Clone Layer", Opacity = 1
6-Start painting on the mesh
7-Switch UV "Front" and UV "Side" as "Layer used for texture paint cloning"
TIPS : the "P" button in the "Paint" panel is used to activate the pressure sensor of your tablet in case you use one.
