This is a quick look at my ribs.
This was at the 3 hour point of about 4hrs 10 min needed to get the ribs to 175ish. Ribs were cooked 2Hrs 30Min before being cut.

The smoker is a large "Big Green Egg" using maple coal. I added 1 chunk (about 2oz) of apple wood soaked in water.

So much fun~
