"Di San Xian," which means "Three Earthy Vegetable" in Chinese, is a stir-fry dish made with potatoes, eggplants and green bell pepper.
To make Di San Xian, you will need:
2 medium sized potatoes
1 eggplant (the one in the Video is Chinese eggplant; feel free to use any type of eggplant)
1 green bell pepper.
1 teaspoon of cornstarch mixed with 1 1/2 teaspoon of water
Soy Sauce and sugar to taste
