Oh the HVX is fantastic! It has a 4:2:2 color space which means that is acquires twice the color information as any other HD or HDV video camera. This allows for me to get super colorful and super nice full images. I do usually run color correction on everything but it's extremely basic.
I just do FCP's 3-way color corrector. I bump up the mids a bit, maybe the saturation up by like 5-10%, and then I bring down the blacks by like 10% to make the images really pop out.
I've never had to spend more than 3 seconds on each clip unless I was going for a totally different visual style like in the holding onto hope video (Desaturated, more blue-ish hue, etc)
