For the last five years, the NYC Estonian House on East 34th Street has been hosting the verivorst festival. Verivorst is barley, onions, minced meat and spices, doused with beef blood and stuffed into sausage casings. You boil it, bake it in bacon, and serve it with lingonberries. Then you eat it (as you made it) with pals.
