I've always wondered though how you deal with materials? What channels do you usually use? Diffuse, specular and bump only? Or do you use others to make those surfaces pop?

Errr as far as I can tell this is the most advanced rendering system in terms of the final product... Do you know something the entire visualisation community do not?!
I'd say Vray is more a quick yet powerful and realistic advanced renderer
while others like MR is more artistic, craft.
Like comparing digital photography and film photography.
Both powerful, but on different levels.
your analogy of digital and film is flawed, as the results of digital and film are not the same. for example the dynamic range of a medium format Hasselblad is far superior to any digital camera, thus there are merits of one over the other.
Excellent sense of mood! Very good cinematography feeling!
You can play with the camera movement, but still very realistic.
There is a depth of field problem in some shots.
