Cheddar Bacon Waffles
Sweet and savoury waffles for your next weekend breakfast / brunch!
2 eggs, well beaten 1 cup (250 mL) milk 3 tablespoons vegetable oil 1½ cups (375 mL) AP flour 3 teaspoons baking powder 2 teaspoons sugar ½ teaspoon salt 1 cup (250 mL) Sharp Cheddar Cheese, Grated 6 pieces cooked bacon
Preheat oven to 375ºF. Arrange bacon in a single layer on a rack over a baking sheet. Place in the upper third of the oven and bake until bacon is brown and crispy, about 10 to 15 minutes. Remove from oven & once cool, chop the bacon into bite size bits and set aside.
Whisk together the eggs, milk, and oil in a large bowl. Stir in flour, baking powder, salt, and sugar until batter is smooth. Stir in bacon & grated cheese. When waffle iron is hot, pour in enough batter to fill (amount varies by iron), Cook according to your iron’s instructions.
Serve immediately with butter and maple syrup.
