As a child, Katrina Blair was marked by how rich and bountiful wild nature could be if one just paid enough attention to it. She discovered that simple little plants we all too often dismiss as “weeds” can provide delicious nourishment. As an adult, Katrina set up a unique learning center in Durango, CO: the Turtle Lake Refuge Center. There, she teaches students from around the world and local visitors alike, the virtues of wild plants she adamantly believes we should eat rather than douse with dangerous herbicides. The flavors she extracts from them are simply astonishing and her recipes are changing many people’s eating habits forever.
