I've been simply using the Final Cut Voice Over tool.
I always thought it was not so great until last year it dawned on me to hook up my sennheiser video shot gun mic through a usb converter. I was very happy, so the basic FCP voice over tool just use a decent mic. The only other software I never do VO without is a few cans of beer. Cans not bottles.
