I've only ever made Summer Tomato Tart, thinly sliced tomatoes on puff pastry. However, Beez and I are experimenting with the recipe, and combining it with a preparation of Sun-dried Tomato Palmiers I made earlier in the week. I think it will work because the ingredients are essentially the same.

This is Step 1, and it involves purging the tomatoes of their excess moisture. To do so, I slice them thinly, sprinkle with salt and sandwich the slices between layers of paper towel.
