They say that more avocados are sold around Super Bowl Sunday and Cinco de Mayo then at any other time of the year. Making Guacamole is such any easy task and it tastes so much better than anything you can purchase packaged at supermarkets, gourmet food shops, and at farmer's market. This recipe is quick and easy and uses fresh ingredients. Talk about healthy!
The fifty-six second video will show you the ingredients we use and how much of each. You can experiment by adding a little more or little less olive oil, cilantro, and lime juice. For the Serrano peppers we scale back the heat by getting rid of all the seeds and most of the veins in the chili pepper. This is an old recipe that my father used to make and he loved the full Serrano pepper. Since I like drinking wine with Guacamole I don't want it to be too spicy hot. I want to savor both the wine and the Guacamole.
I would venture to guess that the preferred beverage of choice with Guacamole and the tortilla chips is beer. I however like to drink a nice crisp and refreshing white wine something like a Riesling that has just a touch of sweetness. Sparkling wine is also good as in Domain Chandon Rosé or the Domaine Allimant-Laugner Rosé that I also recommend for Valentine's Day.
I also love a light red wine like a spicy Garnacha from Spain. There is something magically that happens in my mouth when the red wine and the flavors of Cilantro meet. I think it is a match made in heaven. You might try the Tres Picos Garnacha that Costco carries. It's perfect for the Guacamole. Enjoy and Go Niners!!!!
