16. SCRATCHbread: A Brooklyn Chef Creates Food from Sc…
2 months ago
Meet Matthew Tilden, the founder of SCRATCHbread in Brooklyn, NY.

His day begins as yours ends, working on the counters of a dimly lit, closed-for-the-night pizzeria where he unwraps sourdoughs and shapes breads that he knows, in time, everyone will know about. But come to know, not just for their taste or uniqueness in technique, more so for the ideals they represent.

For SCRATCHbread is much more than just bread, it's about bringing together people with a shared belief about food, to start a food movement in New York City to change the way we see and perceive the food we eat.

Hey Peter. For him, you're right, it truly is an art. It's so much more than just food. Like he said, food is just the driving force of his message. Thanks for checking it out and spreading the word.

Very nicely done, and I applaud what Mr. Tilden is doing (and wish I could taste his bread). Took the liberty of embedding the video on comfortfood.com:

I love SCRATCHbread. Have been a fan since I've learned of it just a few months ago. I have been seeking out SB's scones and bread ever since. A-mazing. And yes, you shouldn't have those scones every day. I got hooked on the Rosemary ginger scones. They taste naughty-licious. I also make my own bread and have been inspired to kick up my game. Thank you Liza for a great video and Matt for the baked yum-yums.

Inspiring stuff. Wish I had just 10% of the entrepreneurial spirit this guy has! :)

If I ever get around to writing a post on creating a brand, I'll make sure to use this vid. Well done.

Yeah, he sure does have a vision. Thanks for watching. I love how his story is truly striking a chord with folks... He is an inspiration, mostly b/c he lived through an experience and is trying to improve it for others!

This guy irritates me. I get and support the passion and artisanship he's putting this, but... look, you can go to Europe, Asia, etc or really anywhere else in the world and find people that breathe love into what they make and it doesn't need an explanation, or self-reflection. Its done for the pleasure of it.

Not making a bread company, he's making a brand? Come on.... The result should speak for everything (including the intention behind it), so its ironic that the place's title is so explicit. Someone is caught between two worlds -- recognizing the corrosive impotent nature of corporate 'production', but still using all the bullshit language and mentality that is its hallmark. The rebellion against all this stuff isn't a revolution, its just human nature reasserting itself -- the novelty of limitless consumption has ran its course for now. This is a revelation for a lot of us suburbanites/Americans, but its common practice in most cultures not hobbled by poverty to practice the art of living.

I don't know. Something about this just rubbed me awkward. Food is great. That people are respecting themselves and what they put into themselves and into the world, is right. I get weirded out by people that obsess on artisanship as they reach the 30s. If you pursue something for the pleasure of communing with it/yourself (exploring a passion) earlier, then whatever path your life takes later doesn't focus so much on the self, and the fruits of your "journey" are just pleasant afterthoughts. Those are seeds that flourish. All truth about how tremendous his bread and his commitment is, if SCRATCHbread at its core embodied what he advertises, he would have spent the video evidencing his purpose by unintentionally demonstrating his passion for making the bread through explanation of the process and its result, not vocalizing his purpose. This just came off as somewhere between religious food worship and corporate psychology. If I'm way off and/or he and the shop didn't translate exactly onto film, please hide/delete my comment, I don't wanna shit all over him but I had to put that out.

I totally know what he means about "the energy" behind food and "sexy dough" :) Ah, so good to see other people who are passionate about food in this spiritual kind of way!
