Meet Matthew Tilden, the founder of SCRATCHbread in Brooklyn, NY.
His day begins as yours ends, working on the counters of a dimly lit, closed-for-the-night pizzeria where he unwraps sourdoughs and shapes breads that he knows, in time, everyone will know about. But come to know, not just for their taste or uniqueness in technique, more so for the ideals they represent.
For SCRATCHbread is much more than just bread, it's about bringing together people with a shared belief about food, to start a food movement in New York City to change the way we see and perceive the food we eat.

If I ever get around to writing a post on creating a brand, I'll make sure to use this vid. Well done.
Not making a bread company, he's making a brand? Come on.... The result should speak for everything (including the intention behind it), so its ironic that the place's title is so explicit. Someone is caught between two worlds -- recognizing the corrosive impotent nature of corporate 'production', but still using all the bullshit language and mentality that is its hallmark. The rebellion against all this stuff isn't a revolution, its just human nature reasserting itself -- the novelty of limitless consumption has ran its course for now. This is a revelation for a lot of us suburbanites/Americans, but its common practice in most cultures not hobbled by poverty to practice the art of living.
I don't know. Something about this just rubbed me awkward. Food is great. That people are respecting themselves and what they put into themselves and into the world, is right. I get weirded out by people that obsess on artisanship as they reach the 30s. If you pursue something for the pleasure of communing with it/yourself (exploring a passion) earlier, then whatever path your life takes later doesn't focus so much on the self, and the fruits of your "journey" are just pleasant afterthoughts. Those are seeds that flourish. All truth about how tremendous his bread and his commitment is, if SCRATCHbread at its core embodied what he advertises, he would have spent the video evidencing his purpose by unintentionally demonstrating his passion for making the bread through explanation of the process and its result, not vocalizing his purpose. This just came off as somewhere between religious food worship and corporate psychology. If I'm way off and/or he and the shop didn't translate exactly onto film, please hide/delete my comment, I don't wanna shit all over him but I had to put that out.
