Silvana Vivoli, the third-generation proprietor of Vivoli Il Gelato of Florence, shares the secrets of how to recognize good gelato. The world-famous Italian gelateria opened its first and only location outside of Florence this year at Macy's Herald Square in New York. Following the family tradition, Silvana makes fresh gelato daily, in house, with pure and simple ingredients. For example, the signature flavor, crema, is made simply with eggs, milk and sugar.
