
Beijing Duck, carved table-side

Missy's aunt and uncle love to eat and know some of Beijing's greatest restaurants. After we visited Forbidden City, they took us to a five-star duck restaurant for lunch, where I had one of the best meals I've ever eaten in my life. The restaurant has several hundred years of history, and roasts its ducks in the most traditional way, with attention even to the type of wood burned in the ovens. Once the duck is carved table-side and served, they take the carcass back to the kitchen to use in making duck soup, which they bring to you when you've finished all the meat.
