White Fish Ceviche - Paired with SEXY WHITE
Serves 4

1 pound Halibut or Sea Bass
1 teaspoon chopped red onion
¼ teaspoon fresh ginger
2 lemons
2 limes
1 orange
fresh Cilantro to garnish
sea salt to taste
olive oil to taste

· Cut the fish into thin slices
· In a bowl season the fish with fine sea salt, lemon, orange and lime juice, citrus zest, red onion and olive oil for
· Mix until the fish is well coated and absorbs the flavor at least 15 minutes, no longer than 1 hour
· Plate the ceviche then garnish with cilantro & something colorful like carrot slices

Beef Tenderloin Tataki with alheira mayonnaise - Paired with SEXY RED
Serves 4

14 ounces beef tenderloin
10 tablespoons non-fat Greek yogurt
2.5 ounces chopped alheira/ Traditional Portuguese sausage (if you cannot source Alheira, ask your butcher for good quality sausage meat)
3.5 ounces São Jorge cheese/ Traditional cheese from the Azores (as an alternative, you can use a good mature Cheddar cheese)
black pepper to taste
olive oil to taste
salt to taste

· Put a little olive oil in a frying pan and remove skin of the Portuguese sausage and chop. Add and cook thoroughly, set aside

· Season beef tenderloin with salt and black pepper
· Put a little olive oil in a frying pan and let it heat up
· Lightly fry the beef on both sides
· Put the cooked alheira in a bowl with the non-fat Greek yogurt, mix everything well
· Grate the São Jorge cheese
· Cut meat into small strips
· Place the meat in a dish with the alheira mayonnaise and grated São Jorge cheese
· You can also pair with a mixed salad
