This week Good Food Revolution heads out to the Junction in Toronto to visit the Farmhouse Tavern.

Chef Alex Molitz was kind enough to take some time out from his busy day to show us both the prep and presentation behind his seasonal Pickerel Escabeche with Pickled Vegetables and Smoked Bone Marrow.

Over the years I often visited Molitz when he was working in New York, both after and during his stints at Craft, Daniel, Café Luxembourg, and Bar Martignetti. It was always apparent to me that he had a passion and attention-to-detail for his work that I had often found to be missing in his peers. Having always much admired his exemplary kitchen skills, it is fantastic to see him getting the recognition he deserves here in Toronto.

Chef Molitz will be cooking at The Chefs' House for a Rising Star Dinner on Wednesday the 5th of March.
