The Spirit of the Grapes!

Earth, water and fire are the main elements of the creation of this special spirit that is called Suma in Paros.

Suma distillation is a “ritual” that takes place for many years now with the participation of friends, music and all kinds of selected yummy delicacies, (mezedes) [plural in Greek].

The “rite” begins by taking care the vineyard, each and every grapevine a whole year round until the final great moment: The boiling in the distillery. This is the time when every suma drop runs pure and clean, and fills up our glasses and our hearts.

This “ceremonious act” is an opportunity for celebration and marks the passage from the summer to the autumn. If you are lucky enough and find yourself in Paros in late September or early October you may be able to participate in such a special event.

Perfect meze for suma or any other spirit!

1 slice of pumpkin [2 cm]
70-100gr Parian hard cheese [mizithra]
½ cup flour
10 tbs water
Oil for frying

Thinly cut the pumpkin and fry in a pan with 1 tbs oil in medium heat, until it melts.
Add the pumpkin puree into a bowl and mix with flour and water. Crumple the cheese and add it to the mixture. Heat a lightly oiled frying pan over high heat. Pour the batter onto the pan, using approximately 1 tbs for each pancake. Brown on both sides and transfer the pancakes to paper towel to drain. Serve hot.
