Resolution: There are really two philosophies to decide between. You can max out your resolution so you only scan things once, but will take a long time. This allows for the greatest flexibility in printing size options. Or, scan for what you need, meaning if you know its an 8x10 print you want, and your sure nothing more, scan it at that. You scanning sessions will run faster, but you will not have the options to go larger later on.
Orientation: It is important to choose the correct orientation after preview, but before hitting the scan button, because to rotate these large files may be time consuming in photoshop (depending on your system specs). If you do it here, pre-scan, it only takes a second.
