Nancy Faidley Devine is the crabcake queen at Faidley's in Baltimore's old urban Lexington Market and the architect of arguably the best crabcake in town. Faidley's busy seafood counters sell multiple crab meat varieties daily with rapid turnover, so top-quality crab that's fresh is used. This is not true of most US and even Maryland crabcake makers, who often use foreign cooked meat that doesn't need refrigeration and costs less than half of US fresh.…
