Itʼs all about Mushrooms.
In this episode the Chef makes use of some of the many mushrooms that are available this time of year.
He starts with a Mushroom Risotto that uses both dried and fresh mushrooms. The dried are in the stock and the fresh are sautéed and added to the risotto along with Parmesan Cheese and Black Pepper.
He then makes a Shiitake Mushroom Soup, unlike a cream based soup this is lighter in texture and uses mirin and soya sauce to deepen the flavor.
