Sweetness lends a certain roundness to savory dishes; it makes the other aspects of any dish come together harmoniously. Breakaway cooks don't have much use for refined white sugar, but we lean heavily on maple syrup, agave nectar, all kinds of honey, jams .... we also make crazy good syrups from fresh ginger and an Indian raw sugar called jaggery.
