For fifty years, big business, government agencies and medical organizations have campaigned deceptively against animal fats, meat, eggs, butter and other nutritious, traditional foods, leading to huge profits from the sale of toxic margarine, shortenings and liquid vegetable oils, and the foods that contain them. The Oiling of America will open your eyes to fraud and deception behind the lipid hypothesis of heart disease. Topics include:
How scientists cheat in scientific studies
Why cholesterol is not the cause of heart disease
The dangers of cholesterol-lowering diets and drugs
Why trans fatty acids and liquid vegetable oils are so dangerous to human health -

“Allergic to the 21st Century: Environmental Illness and the Gut Connection”
Visit Elizabeth's website: naturallywells.com/"We are living in a world dominated by the acceleration of mobile technology: wi-fi, the Cloud, 3G phones and netbooks 'plug' us in to a global network. However a small but growing number of people are reporting health symptoms from exposure to these technologies and some are so sensitive to electromagnetic radiation, they are unable to use computers, televisions, even ordinary phones, and live as virtual prisoners in their own homes. The majority also suffer from a mysterious array of other symptoms, including chemical sensitivities and allergies. A recovering sufferer herself, Elizabeth offers a theory of underlying causality and looks at how the appropriate nutrition and naturopathic techniques can provide a solution."

Paul brings new research to light, including links between fluoride and harm to the brain, bones and endocrine system, and argues that the evidence that fluoridation reduces tooth decay is surprisingly weak.
The fluoride added to water in most of Ireland and parts of England including Birmingham, parts of the Midlands and the North East is not even pharmaceutical grade, but rather a hazardous waste product of the phosphate fertiliser industry.
It is illegal to dump this waste into the sea or local surface water, and yet it is allowed in our drinking water.
Individuals are being forced to take medication without their informed consent, there is no control over the dose, and no monitoring of possible side effects.

2012 Seaweed & Health 79 minsSimon Ranger of Seagreens & Craig Rose Phd from the Seaweed Health Foundation
In soil, for livestock and human food and for use in nutritional therapy, seaweed is reclaiming its place throughout the food chain, replenishing soil ecology and mineral balance.
This talk will provide an overview of seaweed families, species and diversity, locations, wild harvest and cultivation and comparisons between artisan and intensive production. It will also explore uses of seaweed in nutritional therapy.
Historic uses of seaweed will be explored, concluding with a vision of the future place and importance of seaweed in the food chain.

There are a number of plausible mechanisms by which sunlight could catalyse reactions that produce critical nutrients, most especially cholesterol sulphate.
Stephanie will describe a radical, emerging hypothesis that the skin captures and stores sulphur, oxygen and the energy of sunlight in the cholesterol sulphate molecule which acts like a sulphur-based battery. This stored energy can then be distributed via the blood stream to all the tissues. She will argue that a deficiency in sunshine and cholesterol sulphate causes pathology in the blood stream that underlies many disease states. Sunscreens most likely interfere with these processes and Stephanie will go further, identifying ingredients in sunscreens that are also toxic in and of themselves.

Many conditions and diseases, including obesity, heart disease and cancer, could perform useful and perhaps even essential roles. They could reflect the body?s attempts to resolve imbalances which could lead to a fatal outcome if left unchecked. This is evidenced by a variety of processes that take place in fat cells, cardiovascular plaque and tumors which eliminate toxic substances and produce essential nutrients.
Understanding these processes provides insight into root causes of chronic disease, and promotes the concept of holistic treatments that work with the body rather than battling against it.

Autism, Depression and Alzheimer's: A Shared Underlying Pathology & Treatment
The underlying pathology in autism has parallels in other modern diseases of the brain that occur later in life, including depression, schizophrenia and Alzheimer's. This is further illustrated by biological mechanisms common to these conditions which indicate common lifestyle factors which most will find easy to address. They include: (1) insufficient dietary fat and cholesterol; (2) insufficient dietary sulfur; (3) too much dietary fructose; (4) too much aluminium exposure from sources which include vaccines, sunscreens and antiperspirants; and (5) insufficient sun exposure.

This workshop began with an extensive tasting session with commentary about how different cultures adapt to their specific climate to celebrate their local produce. During the practical part of this session, we taste how herbs, nuts and other condiments combine to create new flavours and we learn how to prepare fermented vegetables at home, using simple and safe techniques.
PDF Guides to the workshop are available at Maria's blog: tarantinofoodvice.wordpress.com/2012/03/20/fermented-vegetables-workshop-at-the-wise-traditions-conference-london/

2012 Sourdough Bread, Jane Mason 79 minsSo many people feel ill when they eat bread and that is just tragic given
how good it is for us. Unless you have a serious gluten allergy, you can
eat bread but we should all eat bread that is properly fermented without the
addition of vast quantities of yeast, sugar, so called improvers, and other
unnecessary ingredients. In this workshop, Jane will talk about the benefits of sourdough bread and
how to incorporate baking sourdough bread into our busy lives. She will
also bring along some dough and some bread to make the experience real for all participants. -

Diseases such as obesity and diabetes have really 'taken off' since 'healthy eating' was introduced in the 1980s. This is not a co-incidence; these are classic cases of cause and effect. Barry will explain why a low carb, high fat diet is best for loosing weight and treating diabetes.
-
"It isn't only what you eat, it's also the way you eat it."
Dr Kendrick will suggest that how we eat our food is extremely important to our health. If we eat on the run, without being relaxed, our metabolic system will still be switched to catabolism e.g. burning up and using energy. But when we eat we need to be relaxed so that our anabolic (digesting/storing) system is switched on.
If we try to eat whilst under stress we create an metabolic 'battleground' where the stress hormones e.g. adrenaline, cortisol, growth hormone are battling against the hormones of digestion - mainly insulin. (Cortisol and adrenaline are directly antagonstic to insulin in their metabolic effects). When this happens the level of blood sugar, free radicals, triglycerides and insulin all spike at very high and damaging levels. This talk will outline evidence to support this hypothesis, suggesting how eating under stress can contribute to occlusive arterial plaques/atherosclerosis and heart disease.

“Food as Medicine & the holistic treatment of cancer.”
Jerry was diagnosed with Cancer, Non-Hodgkin's Lymphoma, in 1999 and given 6 months to live. "The Benediction and Forgiveness of Grass"
The grasses, forbs, legumes, trees, shrubs, vines and brambles are a treasure trove of nutrients and phytoceuticals. Thousands of secondary metabolites are produced by multiple plant species for numerous horticultural purposes in order to protect plants from their adversaries and attract pollinators. These lipid soluble compounds accumulate in fats and proteins of grazing livestock contributing to the culinary "terroir" that make food artesianal and provide a "farmacy" of medicinal compounds that confer numerous health benefits to both livestock and their human beneficiaries.

Benefits for people & planet from pasture fed animals & mixed farms; the alternative to factory farming.
One of Britain's greatest cultural achievements was the mixed farm, where grazing pastures powered the sustainable production of vitamin & mineral rich animal products, vegetables and cereals.
In a generation, the policy makers have destroyed this great national treasure. Britain's best farmland now produces "cheat food" that have robbed the nation of its health. Its time to reclaim our heritage - the wonderful, health giving foods of grass lands and the mixed family farm.
