The GH1 is a very good camera obviously, the results speak for themselves.
Like you I wasn't sure what camera to buy in regards to the new breed of DSLR's ... I've gone for the 7D - just wish the 5D had the same features as I would have bought that instead since it has full frame imaging.
I've also got my eye on Sony's new EX that's out next year - it has similar features to the Ex1 but uses SDHC cards, well so the rumour has it ;-) -

I’m known throughout the internet for my music production skills as well as making sounds and music for media application … that’s my job!
Recently though I’ve fallen in love with creative HD video, and have since invested in a range of various cameras from cheap standard definition with a good range of features to mid range high definition and recently to semi Pro high definition.
I have a good selection of editing software too – it all helps in the creative process.
I'm not new to photography, filming or videography, I've won various awards in the past including the `Gold` standard for photo excellence awarded by Kodak. My first movie camera was a 16mm Agfa. Film was so expensive back in the late 70's early 80's that most of my first efforts were time lapsed shots which I would add music too.
HD has brought back picture quality to independent creative film makers - things have become a lot more interesting as a result.
Regardless though, whatever equipment you own, creative output is down to the user.
Over the coming months I will share some of my ideas – these will include my own musical compositions or those of the many fabulously talented musician friends that belong to the Project Overseer Productions concept.
