The highlights aren't blown-out, they are smooshed up into a nice, soft "shoulder" of an s-curve. The point is not to preserve every last bit of detail, the point is to make a nice-looking image. If this had been shot with a 7D, the windows would have clipped HARD. The graded image is not something that could have ever come from a 7D.
