          Preheat oven to 450F Cook 1/2 lb of rotini pasta (salted water, 10 minutes). Set aside Combine in large mixing bowl bowl 2 carrots, sliced 4-6 brussel sprouts, diced 3 stalks celery, sliced 1 lb flash-frozen Mahi Mahi chunks In large enamel casserole pan sauté until soft one half diced purple onion in 3 tbsp of light oil Add 1 quart vegetable broth and 1/3 cup mayonnaise to onions and stir until smooth Add 2 tablespoons of soy sauce and 3 dashes of Worcestershire sauce Lightly season with chervil, black pepper, dill, lemon peel, garlic salt Fold pasta, fish and vegetables into the mixture until coated Cover with heavy tight fitting lid and bake for 50 minutes Serves 4-5

                Los Roques. The archipelago counts hundreds of islands. Kitesurfing heaven. After visiting the ABC islands (Aruba, Bonaire, Curacao) we went up wind to Las Aves de Sotavento followed by Aves de Borlavento where the bird sanctuary was. Arriving to Los Roques we landed on Cayo de Agua, all the kite spots we saw were just perfect (except for a few mosquitoes at dawn). Plenty of fishs! Either fishing while sailing or at the local market at low price. Francisqui was our favorite location since it sits in the middle of everything. Sadly, no paragliding...Its no easy getting to Los Roques, either sailing or flying, but worth the effort! Enjoy. Very little is known to science about how they migrate. Fishermen are helping scientists study their migration by catching Mahi Mahi with fishing rods, placing fish tags in them, and releasing them back to the wild with hope that their fish will be re-caught with the tag still in them. By using this method, fishermen in the Atlantic Ocean have marked and released 15,499 Mahi Mahi and reported 420 recaptures. The recaptures show movements between the U.S. east coast, Bahamas, and Caribbean island nations. These movements when compared to ocean currents suggest Mahi Mahi migrate around the Atlantic Ocean. This information is important to show where Mahi Mahi might be caught along their migration and to discuss how the fish should be shared between the countries it visits in order to conserve it for the future.
