We often think that vegetables should be fresh hours before we cook and serve them, but this is not a necessity. This video illustrates that aspect of the chapter as Tamar cleans, cuts and roasts the vegetables she has brought back from the farmer's market (see How to Stride Ahead - Part 1). The vegetables are then placed in jars and can be kept for meals throughout the week.
