You can define associations between process variables and input parameters of your workitem, so this should be possible. Entering the String application.ApplicationNumber->appId should be parsed correctly as an association, however if it is not, please raise a jBPM Jira and I'll fix it asap. As a workaround if there really is a bug, just map application->app and get the ApplicationNumber in your workitem's execution method.

If you can wait until jBPM 5.2 release then great - everything will be included there. For right now, you could build jBPM 5.2 SNAPSHOT (from master) and same with Guvnor (5.3.0.SNAPSHOT) and should be able to do everything that's on that video. Don't forget to also use the latest Designer version ( sourceforge.net/projects/jbpm/files/designer/ )
