'Fritters' are an easy (and fun!) way to #eatmoreveggies. In this video we show you how to do it with broccoli, but you can also try it with cauliflower, carrots, sweet potatoes, or even turnips!

Recipe for broccoli fritters:
1 lb chopped broccoli
1 cup grated cheese of your choice (we used a Mexican blend)
1/3 to 2/3 cup flour (or corn meal for gluten-free)
salt and pepper
Cooking oil for searing
Place broccoli in a microwave-safe pan or dish. Cover with a wet paper towel and microwave for 2.5 minutes, until tender but still crunchy.
Place cooked broccoli into a food processor with cheese, flour (start with the lower end of the range), eggs, and some salt and pepper. Pulse until you get a thick, combined mixture. If it feels too wet, add more flour. If you don’t have a food processor, chop broccoli finely and fold in the flour, cheese, eggs, and some salt and pepper.
Heat up a non-stick frying pan over medium-high heat. Add enough oil to cover the pan and spoon fritters (~1/4 cup / fritter) into the heated oil. Flatten with spoon and sear on both sides for 2 to 3 minutes each, until golden.
Keep warm in a 250F degree oven if doing multiple batches. Enjoy with Greek yogurt!
