Ever wondered how cinnamon bark is processed after harvesting?
This next film in the Connect To Spice series features a cinnamon processing plant in Yen Bai that clearly shows what improvements are needed if the quality of cinnamon is to be upgraded. Currently, the main customer base buys mainly low grade cinnamon which has led to low incentives to upgrade processing plants and techniques. Now the challenge is to improve processing centres like these to help Vietnamese cinnamon penetrate new, higher margin, higher value markets where quality is paramount.
