Removing hair from a pig with a propane torch

bruce king

Many cultures love the skin of the pig as part of the diet, or in traditional dishes. Most cultures remove the hair in some way; in this case they're using a propane torch to char the hair off and scraping it as they go. they'll eventually scrape the entire charred area off leaing the pig as white as it started and hair-free.

When I scald a pig I do the same process, but use hot water to loosen the hair and top layer of skin; the result is about the same.
